Traditional Bordeaux Blend 60% Cabernet Sauvignon, 31% Merlot, 9% Cabernet Franc

 

Farmed by Claude Solonas, Pleasant Valley Vineyards sits in a warm pocket of Morgan Hill, CA, where the heat gathers in Pleasant Valley along Llagas Creek. The vineyard digs down into shallow old creek bed soils. Between the warm temps and tough soil conditions the grapes are tiny but powerful. 

 

No yeast or sulfites added, unfinned and unfiltered.

Fermentation lasted about 20 days. I pressed the grapes when the wine was dry.

14.3% ABV, 3.65 pH

 

Tasting Notes

Nose: Bone dry dark fruit, slight cranberry and cherry lift, nice green and black olive spine. All of that in a kind of delicate/elegance. Not overly dominating or masculine. 

Palate: Dense and full palate with some freshness. Dry cassis, blackberry, darker cherry, black olive, licorice, spice, and slight dusty soil. 

 

Due to my time at Kathryn Kennedy Winery, I was destined to make a Cabernet, despite having little desire to do so. However, I am super pleased with how this turned out. 

 

*Aerate. This wine drinks great for days after opening.
